One Pot Meals

For the last two months we have been "roughing it." I say that lightly because we really have been extremely blessed. We have, however, gone without a lot of the luxuries that we are used to having, particularly in the kitchen. Since the beginning of the year I have been cooking with one pot, one half-sized cookie sheet (which serves as the lid to my one pot), one paring knife, one wooden spoon and one cutting board. That is all. We didn't even have a working oven. Consequently, our style of eating has changed a little bit.

Enter the "One Pot Meal."

I read on a blog (I'm sorry that I don't remember the source...) that the One Pot Meal is the new Casserole. Fortunately, Pinterest is EXPLODING with tasty recipes that fit this description. Here is a list of the dishes that have become our favorites over the past couple of months.

THIS IS MY FAVORITE
(A lot of these recipes have pasta in them. We almost always use plain macaroni noodles because you can buy a huge box for really cheap...) 
*HINT* for this particular recipe, I precook the pasta for about two minutes and set it aside before I start following the rest of the directions.
*HINT* I also suggest cutting the chicken up instead of cooking the breasts whole.
*HINT* I ALSO suggest doubling the cream cheese because it makes it more thick and I LOVE CREAM CHEESE!


CHAS'S FAVORITE
*HINT* I always add extra meatballs because.... meatballs.












*HINT* You definitely don't have to put this in the oven at the end. I just sprinkled cheese on the top and put the lid/cookie sheet back on for a few more minutes. Not quite baked, but good enough.

All About Sarah

I've been sitting here trying to decide how to start off this new blog, and I suppose I should give an introduction of what make me who I am. 

To start, this was my family when I was little (wasn't I a cutie?). As you can see, I've always been pretty happy. My family is my everything. 


Our family dynamic is a little different now, but my family is still everything to me.


 Well, almost everything. We definitely can't forget this guy :) Chas is my best friend. 


We believe, as it says on the main page of this blog, that it is important to take time to be silly. We have so much fun together. Beyond anything else, Chas is what makes me happy.

We are so blessed to be surrounded by so many people who love us. And we love them, too!!
